Labor Day Weekend Hosting: A Recipe For Any Type Of Gathering

Labor Day weekend marks the unofficial end of summer and offers the perfect opportunity to gather friends and family for a memorable celebration. Whether you’re hosting a backyard barbecue, a poolside party, or a relaxed indoor get-together, this recipe makes for a great small dinner in a pinch or casual gathering of friends. Late Summer Roasted Tomato + Goat Cheese

Ingredients:

Cherry Tomatoes

3 cloves garlic, roughly sliced

Goat Cheese, plain or in your favorite savory flavor

Olive oil

Salt

Pepper

A loaf of rustic bread

 

Directions:

Toss the tomatoes in olive oil, salt and pepper and slices of freshly peeled garlic.

Roast for 15 minutes at 425 degrees or until the tomatoes begin to soften and collapse and are slightly caramelized.

Meanwhile, break up pieces of goat cheese onto a small platter.  If goat cheese isn’t your thing, feel free to substitute with any soft cheese of your choosing.

Once the tomatoes are done, pour tomato and olive oil mixture over the cheese, allowing it to melt and blend.

Spread generously over your favorite crusty bread and enjoy!
